Problem Description

Opening a restaurant in a high-end shopping mall like Beijing Chaoyang Joy City requires not only high brand recognition but also compliance with strict store environment assessment standards. ZAKUZAKU is a cream puff brand renowned for its innovative design, distinguished by its signature process of hand-filling long, crispy cream puffs with custard on-site, and featuring a unique business model that combines a retail store with a bakery. While this model enhances the customer experience, it also places higher demands on the purification of cooking fumes generated during the baking process. How to efficiently manage the hot air produced during dessert preparation without relying on traditional exhaust ducts became the key challenge for ZAKUZAKU to successfully establish a presence at Beijing Chaoyang Joy City.

Solution

To support its unique combined retail and bakery design and successfully pass environmental assessments, ZAKUZAKU selected the MORK ductless recirculating exhaust hood. Designed specifically to provide a ductless cooking environment, this hood is a standalone, high-efficiency recirculation system that discharges fumes directly indoors without requiring any ductwork. Available in suspended or freestanding models, the indoor recirculation hood effectively removes grease, odors, moisture, and smoke generated during cooking when placed directly above cooking equipment.

In addition, MORK uses condensation technology to condense the steam emitted. This recirculating air hood requires no external ductwork and does not necessitate the expansion of existing exhaust systems. The condenser utilizes air from the air conditioning system to effectively lower the temperature of the air at the hood’s exhaust outlet, ensuring a balanced indoor temperature. This effectively reduces the heat generated during the baking process, further enhancing the comfort of the in-store environment.

The equipment is equipped with an EC variable-frequency fan control system that offers three speed settings to maintain a constant recirculation airflow, saving energy, reducing operating costs, minimizing noise, and enhancing workplace comfort.
