Problem Description

As a rapidly rising national snack brand in recent years, Kuafu Fried Skewers has achieved rapid expansion through a streamlined business model characterized by “small stores and high space efficiency.” In just a few short years, the number of stores nationwide has surpassed 2,000. However, in practice, small fried skewer shops often face significant spatial and environmental challenges: store areas are generally less than 30 square meters, kitchen space is extremely limited, and traditional external exhaust systems are difficult to install. How to efficiently handle the dense fumes generated by high-temperature frying without relying on external ducts, while balancing space utilization and regulatory compliance, has become a critical bottleneck for Kua Fu Fried Skewers’ continued rapid expansion.

Solution

To support its strategy of opening small-format stores with high space efficiency, Kuafu Fried Skewers chose to install MORK indoor recirculating direct-exhaust hoods. Featuring an integrated all-in-one design, the unit is suspended directly above the fryer, eliminating the need for any external exhaust ducts and completely freeing the operation from reliance on the building’s existing ventilation infrastructure. The unit’s compact suspended structure occupies virtually no floor space, freeing up valuable room in the already cramped small kitchen. This effectively boosts the efficiency of space utilization and production capacity per square foot, truly achieving the goal of “small space, big output” and high space efficiency.

MORK range hoods are equipped with built-in CFW grease separators and HG high-efficiency metal cyclone separators, which effectively filter particles 5 microns and larger with an efficiency of up to 99%. The purified air can be directly recirculated indoors, achieving “full indoor recirculation and zero outdoor emissions.” The EC variable-speed fan control system in MORK units offers three speed settings to maintain a constant recirculation airflow, saving energy, reducing operating costs, minimizing noise, and enhancing workplace comfort.

With this solution, Kuafu Fried Skewers can flexibly establish locations in prime high-traffic areas—such as subway exits, shopping mall atriums, and ground-floor retail spaces in residential communities—where ventilation is limited, thereby accelerating the expansion of its nationwide network.
