Problem Description

Deji Plaza is located in the heart of Nanjing’s Xinjiekou commercial district. With its luxurious facilities, strong tenant recruitment capabilities, and exceptionally high foot traffic, it consistently ranks among the top shopping malls in the country in terms of revenue and is a landmark high-end commercial complex second only to Beijing SKP. Opening a restaurant in such a top-tier, ultra-luxury mall not only demands a high level of brand consistency but also imposes stringent standards on the store environment. “Tokyo’s Top Dessert Trend-Setter” RAPL chose to occupy a prime location beneath the escalators at Deji Plaza. However, this space is compact and enclosed by the building structure, making it completely unsuitable for external exhaust ductwork. The key challenge for RAPL’s successful opening was how to efficiently manage the large amounts of steam and heat generated during steaming and baking without compromising the mall’s overall design or increasing the engineering burden.

Solution

To overcome the limitations of the location and meet the environmental and spatial requirements of a high-end shopping mall, RAPL selected MORK’s indoor direct-vent oven hood.
