Problem Description

As China’s tallest building and one of Shanghai’s landmarks, Shanghai Tower is located in the heart of the Lujiazui Financial and Trade Zone in Pudong. Thanks to its prime location and comprehensive amenities, it has attracted numerous businesses, resulting in high foot traffic and making it an ideal location for restaurants. However, this green building—designed with environmental protection and sustainability at its core—imposes strict environmental requirements on tenants. This is particularly challenging in enclosed spaces such as the underground levels of high-end shopping malls, where the lack of external exhaust ducts makes the disposal of cooking fumes a major problem. When Good Friends Gimbap opened its store in Shanghai Tower, the main challenge was how to efficiently manage cooking fumes and odors without access to external exhaust ducts, while simultaneously meeting environmental standards and successfully securing a lease.

Solution

To successfully establish a presence in Shanghai Tower and address the lack of external exhaust ducts in the underground levels of this high-end commercial complex, Hao Pengyou Zicaibao Fan selected MORK’s ductless recirculating exhaust hood. This system completely revolutionizes traditional exhaust methods by offering suspended or freestanding indoor recirculating purification hoods. By placing cooking equipment underneath these hoods, the system ensures smoke and fumes are vented without disturbing nearby residents.

Traditional kitchen ventilation systems consist of range hoods, ductwork, purification equipment, exhaust fans, and fresh air systems. In certain locations, such as underground shopping malls and airports, restaurants are unable to discharge cooking fumes and exhaust gases outdoors via ductwork. Consequently, restaurant site selection is subject to specific constraints and limitations.
